Ingredients:

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/4 cup finely chopped red onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup shredded carrots
  • 1/4 cup chopped parsley
  • 2 hard-boiled eggs, chopped (optional)

Instructions:

  1. Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey, salt, and black pepper until smooth and creamy.
  3. Mix the Salad: In a large bowl, combine the cooked macaroni, celery, red onion, red bell pepper, shredded carrots, and parsley. If using, gently fold in the chopped hard-boiled eggs.
  4. Toss with Dressing: Pour the dressing over the macaroni and veggies, stirring gently to ensure everything is well-coated.
  5. Chill and Serve: Refrigerate for at least an hour to let the flavors meld. Serve chilled and enjoy the bright, zesty flavors of this refreshing macaroni salad.

Tips:

  • For a tangier salad, add a tablespoon of pickle juice or chopped pickles.
  • For a heartier option, toss in some diced ham or bacon.
  • This salad keeps well for up to 3 days in the fridge, making it a perfect make-ahead dish for gatherings.
