Zucchini Ribbon Salad Recipe
with Cherry Tomatoes, Basil & Feta
If you’re anything like me, you either have a ton of zucchini right now or you’re seeing it everywhere at the farmers market. Summer zucchini has a way of showing up all at once, and this is a beautiful way to use some of it without turning on the stove.
Instead of cooking the zucchini, you shave it into long ribbons and toss it with cherry tomatoes, fresh basil, leafy greens, lemon, olive oil, and crumbled feta. It’s light, fresh, colorful, and exactly the kind of thing that looks like you tried harder than you actually did.
Serves: 4
Time: About 15 minutes

Ingredients:
- 3 medium zucchini
- 1 cup cherry tomatoes, halved
- 2 cups curly lettuce or tender leafy greens
- ¼ cup crumbled feta or goat cheese
- ¼ cup fresh basil leaves
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 small garlic clove, finely grated or minced
- ¼ teaspoon salt, plus more to taste
- Freshly cracked black pepper
Instructions:
Using a vegetable peeler, shave the zucchini lengthwise into thin ribbons. Stop when you reach the seedy center, then rotate the zucchini and keep shaving from another side.
Arrange the lettuce on a platter or shallow serving dish. Add the zucchini ribbons on top, then scatter the cherry tomatoes, basil leaves, and crumbled feta over everything.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, salt, and black pepper.
Drizzle the dressing over the salad right before serving. Add a little more cracked pepper on top if you want it to look extra pretty.
Make-Ahead Tip:
You can shave the zucchini a few hours ahead and keep it covered in the fridge, but wait to add the dressing until right before serving. Zucchini releases water pretty quickly, so this salad is best when it’s fresh, crisp, and lightly dressed.
